Located in the Bloomberg Arcade, Koya City is our second noodle bar, which launched in 2017 - 7 years after Koya Soho first opened its doors. Phil is friend who is long time regular at Koya Soho. A salad on blackboard +udon is his favourite combo🥗🍜

“I followed the easy instructions for cooking the noodles and dashi, then added pulled rabbit leg meat to the hot broth along with a few cooked Jerusalem artichokes and morels (I had previously poached the rabbit in chicken stock with leeks, a whole garlic bulb, Jerusalem artichokes and morels). A few wild garlic leaves, that wilted in the hot dashi, and some Jerusalem artichoke crisps on top completed the dish.”

“Round 2 of using @koyalondons excellent omiyage udon kits as a base for a meal. I blitzed cod fillet in a food processor, seasoned with finely chopped spring onions, freshly grated ginger, a splash of soy sauce and a grind of white pepper, and added egg white to bind and formed it into balls which I chilled in fridge. Once again, I followed the simple instructions for cooking the noodles and dashi and then put in blanched fresh seaweed, a few strips of organic lemon peel and ginger to scent the dashi. I poached the cod fish cakes for 5 minutes in the broth until cooked through and finished the dish with spring onions. A clean, invigorating, energising and thoroughly satisfying lunch. “
